Getting creative in the kitchen, especially around this time of year, means apples! I went apple picking with my sister on Monday at Blackman Homestead Farm. Wow, do they have a variety of apples! I also got pears, which I’m hoping to pickle… little seckle pears. We’ll see how that goes. But today was the day to make a delicious, moist, apple cake. And as I was making it, I also noticed some Tenessee Cider Whiskey in the cabinet, so decided to make a cider whiskey glaze with butter and cream to pour over the top. It’s amazing. The recipe is below, and as I mentioned in the episode, there are lots of alternatives you can use with this recipe to make it your own! I hope you enjoy, and subscribe so you don’t miss the next episode of Creative in the Kitchen.

Slice of apple cake with whiskey glaze

Apple Cake with Tennessee Cider Whiskey

  • 2 1/2 cups flour
  • 2 tsp baking powder
  • 3/4 tsp baking soda
  • scant 1/2 tsp salt
  • 2 tsp cinnamon (I added a bit extra)
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • 1/4 tsp ground allspice
  • 1 cup olive oil
  • 1 cup white sugar
  • 1/2 cup mixed light and dark brown sugar (or you can use one or the other)
  • 1 cup (or 2 snack cups) of unsweetened applesauce
  • 4 eggs
  • 1 tsp vanilla extract
  • 1 1/2 TB orange bitters
  • 3 cups (fill em up) chopped apples

For the glaze:

  • 1/4 cup butter
  • 1 cup brown sugar (I used mixed light and dark)
  • 1/2 cup half and half (or cream or milk)
  • pinch of salt
  • 2 TB Jack Daniels Winter Jack
  • 1/2 cup powdered sugar

sprinkle with coarse salt if you like

Preheat oven to 350 degrees

Grease a 9 x 13 baking pan

whisk the following together in a large bowl until well blended, then set aside:

  • flour
  • baking soda
  • baking powder
  • salt
  • cinnamon
  • nutmeg
  • ginger
  • allspice

Whisk the following together in a medium bowl until well blended:

  • oil
  • white sugar
  • brown sugar
  • applesauce
  • eggs
  • vanilla extract
  • orange bitters

Fold in the chopped apples until combined

Pour/spread into your greased pan, making sure the top is even.

Bake for 45 – 50 minutes. After 35 minutes, cover the top of the pan with foil to prevent the cake from getting too brown.

Check the cake at the 45-minute mark and keep testing until your tester comes out clean. Do not overcook!

Remove from the oven and allow to cool for 30 minutes.

If you use the glaze, now is a great time to make it. It does have to cool for 20 minutes or so to thicken, so if you’re not serving til later, it can wait.

Make the Glaze

Combine butter, brown sugar, half and half, whiskey and a pinch of salt in a medium saucepan. Stir constantly over medium heat until the butter has melted. Then increase heat slightly, and without stirring, allow the mixture to come to a rolling boil. Allow to boil for one minute, then lower heat to simmer for one minute more. Remove from heat and whisk in powdered sugar. Allow to cool for 20 minutes or more until thickened. Then pour over cake. If it becomes too thick, you can heat it up in a microwave.

I hope you enjoy it. Here are a few other additions I’d recommend trying:

  • Add chopped dried cranberries
  • Combine half apples and half pears
  • Add walnuts
  • Add chopped candied ginger
  • Try pumpkin pie spice in place of the individual spices
  • Sprinkle a brown sugar and cinnamon mixture across the batter before putting the pan in the oven

Cooking is meant to be creative, and sometimes we get the urge to bake but we don’t have all the ingredients. So experiment and taste! You may come to realize you’re an amazing baker!
